Double Chocolate Superfood Cookie Dough

Can there be anything better than healthy double chocolate cookies you can easily make to satisfy your sweet tooth? If the answer is “no”, you've come to the right place because here is my double chocolate superfood cookie dough recipe you can eat even raw because instead of using eggs that shouldn’t be consumed raw I use flaxseed meal. So if you thought that you will have to wait for your cookies to be baked and cooled I’ve got great news: you can eat them raw! And yes I did it too...

Being completely honest I was going to bake my cookies but of course, I ended up eating almost half of the raw dough before I could preheat the oven… Please don’t judge me…

Ingredients:

  • 1 cup almond flour
  • 1 cup mashed ripe bananas (about 2 large)
  • 2 tbsp melted organic coconut oil
  • 1/2 tsp organic powdered ginger
  • 1 ½ tsp pure vanilla extract
  • 1/4 cup raw honey (agave nectar or maple syrup)
  • 1/2 tsp pink Himalayan salt
  • 2 Tbsp Maca Powder
  • 1 Tbsp organic Cinnamon
  • 2 Tbsp Chia Seeds
  • 1 flax egg (1 tbsp flaxseed meal and 3 tbsp water)
  • 1/4 cup chocolate chips

Instructions:

You can eat your chocolate cookie dought raw or baked.

Raw Option:

  1. Add all the ingredients into a medium ball (except chocolate chips) and stir them until very well combined. Then stir in chocolate chips.
  2. Spoon the batter onto a lined baking sheet, and use your hands to gently flatten the cookie dough.
  3. Fold in chocolate chips. Chill and serve.

Baked option:

  1. Add all the ingredients into a medium ball (except chocolate chips) and stir them until very well combined. Then stir in chocolate chips.
  2. Spoon the batter onto a lined baking sheet, and use your hands to gently flatten the cookie dough.
  3. Bake at 350F/180C for 12 to 15 minutes. Allow them to cool for 5 minutes, then remove them from the baking sheet.

Notes: If you want creamier chocolate cookie dough, add 1-2 Tbsp of coconut or almond milk!
