Double Chocolate Superfood Cookie Dough

Can there be anything better than healthy double chocolate cookies you can easily make to satisfy your sweet tooth? If the answer is “no”, you've come to the right place because here is my double chocolate superfood cookie dough recipe you can eat even raw because instead of using eggs that shouldn’t be consumed raw I use flaxseed meal. So if you thought that you will have to wait for your cookies to be baked and cooled I’ve got great news: you can eat them raw! And yes I did it too...

Being completely honest I was going to bake my cookies but of course, I ended up eating almost half of the raw dough before I could preheat the oven… Please don’t judge me…

Ingredients:

  • 1 cup almond flour
  • 1 cup mashed ripe bananas (about 2 large)
  • 2 tbsp melted organic coconut oil
  • 1/2 tsp organic powdered ginger
  • 1 ½ tsp pure vanilla extract
  • 1/4 cup raw honey (agave nectar or maple syrup)
  • 1/2 tsp pink Himalayan salt
  • 2 Tbsp Maca Powder
  • 1 Tbsp organic Cinnamon
  • 2 Tbsp Chia Seeds
  • 1 flax egg (1 tbsp flaxseed meal and 3 tbsp water)
  • 1/4 cup chocolate chips

Mmmmm! I don’t know which appeals more… I love the idea of cookie dough right now, but I also love freshly baked cookies. Half and half? 😉
Thanks for this, will print the recipe for when I eventually get around to digging out the mixing bowl like I’ve been meaning to! xx
